Brewer's Note: This coffee is perfect as a latte. Using 18g of espresso ground, extract anywhere between 30g to 40g of espresso. Top it off with 130-150g of steamed milk. There's a short green apple acidity which hits you at first sip. Thereafter, slowly enjoy the brown sugar note that lasts till the end of your coffee.
Origin
Nestled in a northeastern Laos, little was know about the coffee farms Xamtai district of Houaphan province. In 2015 however, our partner Yuni Coffee Co. started working alongside these coffee farmers. Produced by 40 families from 1 village, farmers are paid cash directly for riped coffee cherries they sorted out. While we've partnered Yuni Coffee Co since 2017, it is our first time bringing in these beans!
Roast Profile
Medium Light Roast
Roaster's note: There is very little acidity in this coffee, thus making it a great choice for espresso. We roast this at medium-light profile to retain that little acidity from this coffee, and aiming for a well-developed coffee that gives the sweetness we are aiming for.
