Roast date: 24 December 2020
Tasting notes: Strawberries, Cane sugar, Tea-like
Processing method: Natural
Varietal: Catimor, Java, Yellow Caturra
Elevation: 800-1200 masl
Suitable for: Espresso, Filter
Brewer’s note: This coffee is good both on the filter and the espresso. I tend to use 18g and pull 30g out on espresso while my brew ratio is 1:14 on filter. While the body is lacking, this is one of our sweetest coffee around, especially with the prominent strawberry notes for both brewing methods!
Origin
This coffee is produced by 40-50 families from 2 villages in Houaphan province. The coffee cherries are dried on raised beds and solar drying house. After sorting out the unriped cherries, farmers are paid cash directly for riped coffee cherries.
These coffees are almost "forgotten" as the farms are located in the remote northeastern region of Laos. We really enjoy the Xamtai's notes of strawberries. This is a microlot coffee and we are proud to be the only coffee company in Singapore featuring it!
Roast Profile
Light Roast
Roaster's note: My definition of a light roast is slightly darker than what you might get from other roasters. Not many brewers can extract a light-roasted coffee well, and to reduce the risk of badly extracted coffees, I tend to roast even such delicate coffees slightly darker to be used both for filter and espresso.
