This coffee is produced by Thiha Gyawalie, a forward-thinking next generation coffee farmer who has won multiple accolades in the specialty coffee industry. He started experimenting with processing and fermentation methods a few years ago, improving coffee quality and leading his family’s coffee business to the forefront of specialty coffee in Myanmar. Ruby Hills Farm situates in Mogok, Mandalay State, in northern Myanmar and spans seven mountains and this is the least densely planted coffee farm in the country.
After harvest, these cherries are sorted then pulped and dry-fermented for up to four days in small batches to achieve even fermentation throughout the harvest. The coffees are then washed and dried for 22-26 days.
Roaster's note: This is our first Burmese coffee and we bought this over an auction organised by the Singapore Coffee Association. This coffee is produced by Ruby Hills Specialty Coffee, by producer Thi Ha. It scores 87.25 and is a bright and juicy cup of coffee to enjoy. This coffee also won third place in the 6th Myanmar National Coffee Cupping competition. We only have 30kg of this coffee from the 2020 harvest, so be sure to try it!
Shelf Life & Storage
Best consumed within 60 days from roast date. Store in a cool and dry place. Avoid direct sunlight. Do not put in the fridge.
